When in 1843, Simon Huber settled this Southern Indiana farm, he brought with him from Baden-Baden, Germany his years of experience in fruit growing and wine making. From its humble 80 acre beginning, the farm has expanded to over 600 acres. Simon’s vision has been perpetuated through the 4th, 5th, 6th and 7th generation Huber’s living and working on the farm.
Starlight Distillery and our rickhouses are located on the
Knobstone Escarpment in Southern Indiana. Our small batch
is so named as an homage to these rickhouses. Our Old
Rickhouse small batch rye whiskey is a blend of 4-6-year-old
whiskies. It is crafted from multiple mashbills that age in new,
white American oak barrels. The result is rye whiskey that
is smooth, full of flavor, and long lasting. Preferably enjoyed
neat or on the rocks but can make a fantastic cocktail too.
Appropriately named after the Grandfather of 6th generation co-owners Greg & Ted Huber, the Huber’s felt it only fitting to title this signature blend after their 4th generation grandfather “Carl T” who had a love for bourbon.
This signature blend of bourbon is comprised of 58% corn, 27% rye, and 15% malted barley. Distilled in Huber’s 80 gallon copper pot still from Germany and then transferred to 53 gallon charred, American White Oak barrels from three different cooperage companies and four different barrel styles, continue to add quality and complexity to this signature blend.
Starlight Distillery’s small-batch bottled-in-bond bourbon is a unique, limited-release product. Beginning with sweet mash and distilled in our copper pot stills, this straight bourbon whiskey is aged for a minimum of 4 years in Huber’s Old Rickhouse (on the grounds of the 7th generation Huber estate, established in 1843). We then bottle at 100 proof under the Bottled-in-Bond Act of 1897.
Carl T. is our small batch signature bourbon named after 4th generation family member, Carl Theodore Huber. After 4 years of aging in new, charred American Oak, this Carl T. batch was transferred into unused Seguin Moreau Vanilla Toast bourbon barrels to age an additional 8 months. This process provides intense oak notes, enhanced vanilla flavor, and mellowed rye spiciness.
