Spirits of French Lick is leading the way for Indiana distillers by bringing the artisan distilling industry and its inseparable history back to the Southern region of Indiana. Our goal is to represent both the quality and the history of Hoosier distillation, presenting an untold and ever unfolding story about the nature of distillation in the state, while exemplifying and expanding upon what that industry has evolved into.
The Morning Glory Bottled-In-Bond Kasha Bourbon is a Straight Bourbon whiskey with a mashbill composed of 66% Corn, 12% Rye, 16% Kasha (toasted buckwheat), 2% Buckwheat, and 4% Malt.
Aged exclusively in our Chai cellar using 53 gallon, #2 char barrels, and a 105 entry proof, as with all our spirits we do not chill filter this offering in order to leave as much of the flavor as possible.
Nose: Toasted Kasha and a light herbaceous quality resembling mint, with a hint of roast malt .
Front: Sweet and mouth coating - very oily with almost maple undertones.
Mid: Toasted Kasha is the focus - like almonds roasted in butter, viscous, honeyed oats.
Back: Sweet toasted nut flavors, almost cereal like, give rise to a slight prickly pear jelly.
Finish: Super viscous, the flavor coats the palate and herbaceous/mint like quality mixed with a bit of honeyed peanut leisurely reminds you of the unique mash bill.
This bourbon is double pot distilled, and the cuts on the doubling run were made in an exceptionally clean manner to bring the grain and terroir out in this spirit. The emphasis is on retaining and concentrating the grain flavors during distillation and balancing these elements with the barrel characteristics during maturation. We use number 2 charred New American Oak barrels, toasted prior to charring, and with toasted heads, to provide lignin, caramel, and vanilla flavors.
Appearance: Deep Amber, Red-Orange Stained Glass. Long streaming legs. Nose: Caramel/Honey/Nutmeg working together. Fennel, Cardamom, slight black tea.
Palate: Creamy. Round, and lifting. Caramel and vanilla on entry followed by and apple, mint, graham cracker, and ginger note. Cardamom is not to be missed.
Finish: Slight French Walnut, resolving to sweet, fruity, almost ground cherry, white pepper.
